That is the temp adjustment if it is in the shaft, the pilot adjustments are to the side- under the knob, but not in the shaft.
When I adjust those, I set the temp at 300, let it run for a while, then see what the actual oven temp is- then I hold the adjustment screw stationary, and turn the shaft to about what the right temp is.
Easier to do than describe, but I just about guarantee that yours is adjustable.
