Wanted to give you an update since you have been so helpful. Eric at Midwest gave us a call back and he has been consulting with my RV Tech.
Concerning the air conditioning kicking off because the voltage drops when the generator is running: They tested the voltage with the generator running and determined that most likely my inverter needs to be replaced ($1100 part and needs a new panel because concerned that if we buy the same model we may have the same problem: whomp whomp) They can't be 100%sure that's the issue but that is their best guess.
Concerning the battery not charging when we are driving: Eric says that there was a BIM/BGI installed that the manufacturer originally thought was needed to protect the battery and now they have determined that it is not needed and should be removed.
Our next steps are to have my RV Tech replace the inverter with a newer model and removed the BIM/BGI and go from there. He feel confident in his ability to deal with the wiring to do these things.
