Not to smooth the water flow so much but to reduce a spike in pressure when the water heater goes from cold to hot with no water flow.
This issue has caused pipe leaks in an apartment building, two homes and my RV to the tune of $20,000.
All fixed eventually and since prevented with an expansion tank.
Maybe I am a bit biased ;)
