I learn by reading, then trying, then reading some more. When I get lucky I find people who have been there and done that and I try to learn as much as possible from them. Seems like you are on the same path.
You already have some pretty interesting pieces there you can apply to your cabin, RV and scooter. I came up with one more goofy use case for you - mount some of the cabin 12v batteries in a bank on the golf car if there is room. Mount the too-big panel on the golf car roof. You can now drive one bank out to the sunshine for solar charging, and drive it back to power the cabin.
