When we’re traveling and running the fridge from the inverter, I set the fridge thermostat on one of its lowest settings so the cooling unit runs just enough to maintain a safe temperature. That’s where my LED meter on the front of the camper and the wireless thermometer come in handy. If I set the thermostat too high, the cooling unit just runs all the time, and the camper battery slowly looses ground.

I'm going to have to try this.
My truck's alternator runs a 1000W inverter in the truck that I use to charge the trailer batteries when traveling after boondocking. Never occurred to me to use it to run the trailer's frig on 120VAC when traveling as well.:S
The 8 cuft frig seems to take ~260W at 120VAC. And the 120VAC battery charger takes a max of ~520W so the 1000W PSW inverter should be able to handle it. And we have solar charging at the same time, so when the sun's out the 120VAC battery charger will have less to do.
Will have to move some wires around, but it think it's doable.
The OP's frig seems to take more watts though, >400W ??
