One fan is ok, 2 are better. I canned my OEM Dometic fan for a pair of Dynamic Fluid Bearing computer fans, 120mm high flow and mounted them against the upper condenser blowing out the upper vent wired into an adjustable snap disc thermostat attached to the outer cooling fin in the condenser (where the original Dometic snap disc, non-adjustable unit was.
On Dometic fridges, there will be a terminal strip adjacent to the control box that you can pick up the 12 volt power needed to run the fans or use the existing wire and upgrade the fuse to a 2 amp fuse.
Mine cools so well that it actually shuts down completely at night now. and the FDB fans are completely silent, no fan noise whatsoever.
Used to be I had to run the fridge on 5 in the summer to maintain 40 in the fridge. Now, it's on 3 and it runs at 35 degrees no matter what the outside temp is. Big difference.
The more airflow over the upper condenser, the better.
I would also suggest checking how much wool insulation you have between the outer cabinet and the fridge. I stuffed in an additional 1/2 roll of R15 unfaced insulation. The more, the better.
Additionally, on side vent fridges, Dometic recommends an upper curved baffle to direct the airflow out the upper vent. Make sure the baffle is there and if it isn't, make one from a sheet of aluminum and install it. Every little bit helps.
