I didnt see your Battery set up till this post, for what you are trying to do it will work, you should get bounce back like a few have said, but I also agree that for what you want to run you should be up around 400ah capacity. the larger capacity the less drop you will see as its less of a load on each individual battery.
I only have a 2000watt inverter and run my microwave (900 watts) off it no problem, but that is in the 5th wheel with 420 amp hours of batteries. I am in the middle of converting to LFP on my fith wheel, just ordered a new solar controler and converter. so I replaced my expensive GC2's that lasted over 14 years and gave me 475AH to the cheepest GC2 208ah (costco)and boy am I disapointed in them, but if they get me through a season or two while I get all the new pieces set up for LFP it will be ok as when I get my cells I will be putting 840AH in the 5th wheel and 280AH in the camper (no microwave in the camper so 280AH and my solar panel will let me camp a long time with just the furnace, fridge, waterpump and lights)
