I too have moved our 5rv with all 3 slides extended.
Dealers move trailers around lot with slides open all the time
BUT you are going to be removing/replacing landing gear so with 5vr hooked up to truck I would also support both sides of 5vr frame with jacks to stabilize 5vr while working on landing gear
