Doubling the gen would help as you say. OP can get a second 1000 and parallel them to run a bigger amp charger/converter. If his rig has a 55 amp converter that can do 14.x, that single 1000w gen won't run it.
Last summer we stayed in many BC and Alberta provincial and national parks. Over the years, we upgraded to 330W solar and 4 AGM batteries. We dry camped all the time and never ran our genny and this is with an all electric fridge so even in the trees, solar does work.
My suggestion is to buy as much solar as you think you need but plan on adding in the future. More battery AH is better but if you do not have the room or the $, go with what will fit on your particular trailer. Many owners are weldng platforms on their tongues behind the propane tanks to accommodate 4 batteries. This allows you to be more self sufficient when there is limited genny hours in the CG.
Switch out all of your lights to LED's if you haven't already done it.
