This certainly isn't scientific by any means, but I've found that if I need good quality stainless hardware, it isn't shiny. The finish is somewhat dull as compared to the typical usually-Chinese-made bright and shiny "stainless" hardware.
Probably something to do with the metal composition, I'll let the experts chime in on that.
