It's not dead, but the choice PWM vs MPPT will become clear once you've decided on total panel wattage.

No, but total Voc of array shouldn't exceed maximum input voltage that controller is rated to.
E.g., could I use a -40watt residential panel? Would that have other drawbacks? Wire size? Sturdiness?
40W is a maintainer and hardly needs any controller. Decide on TOTAL wattage. Your energy needs listed in the 1st post should be quantified with a proper energy audit. Without numbers of AH usage you won't get accurate estimate of needed solar wattage. Might as well toss a coin

Battery bank depends on solar wattage and energy needs. Energy audit first.
