Hmm... sounds like I would need a lot of solar to run both freezers. Another option would be to stick with the one freezer, and have someone back home send me frozen stuff from the other periodically. Much less convenient.
If you're RV'ing and need a freezer 24/7 (this is for your shaved ice gig?), you'll need close to what Almot posted above. I think in some areas of the country you could get by with less module wattage, especially with simple tilt mechanisms. Thinking about whats available, maybe 3 X 250W modules may do it.
Again, that energy audit of daily use needs to be done.
I would also suggest that to proceed with a "fill the roof" policy might also be to your advantage. Just from the few posts here and stated draws, you might be considered a "medium-to-heavy user" of RV power. Besides, once you are getting free power, the addition of devices is inevitable.
