You don't have to check all six every time. A spot check of one or two cells gives you a good idea where you are at. Unless you suspect something is wrong, it is unlikely you have a bad cell. You can get a full set of SGs every so often, say after your monthly or so time Equalize session.
I now have six batteries that need checking and I sure don't do every cell. One cell each is good enough for me. I do them all once in a while to confirm everybody is happy in battery land.
I doubt the short time voltage drop under load from the fridge cycling has any lasting effect wrt sulfation, but maybe Mex knows better.
I agree with smk, now that you have that 31 sorted out it should stay that way. Solar is starting to get better this time of year so you should be good till next Fall/Winter anyway. Lots of time meanwhile to have some other darn thing to worry about in this crazy RV business :(
