What’s better in 12v batteries?
3 34 amp hour batteries or 1 100 amp hour Battery?

Balanced wiring would be needed. You would gain some advantage at very high loads--but with only 100 amp-hours to play with I can't see it being any advantage.
If the small batteries are free--go for it. If not--then just one jar solves a host of issues.
