There exists, somewhere in your RV, a sticker, Mine is on the inside of a cubbord door.. IT lists all that stuff.
It also lists the weight of the rig, both dry and wet.
Method 2 for finding tank capacity.
Five gallon calibrated pail.
Method 3: Multiple trips across a scale.
one dry
One full fresh tank
One drain the fresh,, INTO the black till it fills then on the ground
One dump black and fill the gray
You get the idea.
