As usual, it comes down to "it depends". The only off grid homes I've seen use 2 volt cells. So far as that goes--I've only seen five. But those five were in situations where they were a long long ways from the grid.
In very special situations where weight and resistance to voltage drop are needed it may make sense to use 12 volt--preferably trolling, but "in a pinch" marine.
My OEM battery bay had room for three group 29 batteries. I knew I wanted a large inverter. So it made sense to go to 12 volt jars. I did not want problems with the chassis battery being "different chemistry" so I replaced it as well.
Then a different project failed and I scavenged the four 12 volt batteries from that and gave up one storage bay--which I had suitable reinforced.
If my OEM compartment had had only room for two batteries I just might have gone with six volt jars--but then...the large inverter would lead me back to 12 volt.
Each person needs to find what will work for them.
My one bank is showing age now, so I really am considering jumping onto the LI band wagon. Cost would currently be about double for a 500 amp-hour LI. If I can squeeze out another year from the exiting bank, then I'll redo my solar at about 1500 watts.
Another road is repurposing a used Nissan Leaf battery. They start out at 24 KWH and are not considered useful for a vehicle at 16 KWH. Of course 16 KWH would be wonderful in an RV.
