Fridge on propane uses about 17AH a day from 12v, so in an 8 hour drive, that would be about 6AH so 6/8 of 1 amp average draw, so the 100w panel is plenty just for that.
But your 7-pin will take care of that so no solar needed for that job.
Are you really talking about when camping and not when driving? 100w of solar is not much for any length of time off-grid. 300w flat on roof is more like it, or 200w portable that you can aim around tilted up at the sun during the day.
