My thought is to run the microwave on high and check each battery cable in the system to see which ones might be undersized by the amount of heat they give off.
Is this a valid test?

Yes it is. I like to call this type of diagnostics Sesame Street. "One of thiese things is not like the others one of thiese things is just not the same". I suggest that you go to Trojan batteries web site and find there "white paper" On high amp draw thermo imaging test showing why it is so important to crimp "and" solder battery cable connections.
