In my mind, with your growing family, the 2500 'Burb is a no-brainer. Yes, it will cost you more. But you already knew life was going to be more expensive with a large family. And RVing isn't a cheap vacation. Not by any stretch. Anyone who tells you that you'll save money over traditional motels and other ways to travel is lying.
BTW, your tongue weight is more likely to be closer to 12/13%. Figure 780# to be safe. 650# is optimistic at best.
