Absolutely. Although everything has its limits, with the 2500 Sub you should be able to load your trailer to the max and still not worry about overloading your Suburban, even if you take extra supplies or your kids invite a friend or two. The hilly terrain as you head west will seem a lot flatter with the 8.1 engine, and you likely will get around the same MPG towing, maybe a tiny bit less. I'd do it in a heartbeat.
