2003keystone cabana rebuilding bunk end

My front bunk end has gotten some water damage and I would like to replace it. I'm pretty handy but looking for some help. First should I use 1/4in plywood or 1/8 in luan, next how do I remove the exterior panel without damaging it, and last is there a material list available so I get the right stuff. Thanks for any advice.
