While the 6.0L will certainly tow, the difference that you will notice is the higher RPM it will need to run for the same work load.
For me, the 8.1L will loaf along at 2000-2400 RPM at 65mph towing 7200# with 8 passengers while rarely shifting. The 6.0L will need to run at 3000+ rpm to do the same work and shift more often to maintain a given speed on cruise control. The gpm may be the same or worse if the 6L has to work harder, but probably close.
Comparing the HP/TQ curves, at 3000RPM(real world driving),
the 6.0L has 152hp/266tq
the 8.1L has 204hp/356tq.
So for real world driving, the 6.0L will get the job done.
The 8.1L will get the job done and be able to merge and pass when needed.
Oh, and nobody comes between me and my 8.1 Burb... :C
