Without knowing how heavy of a trailer you plan to tow and where you want to take it, it is hard tell you if it will be an easy drive or one that requires constant attention. I think if you stay bellow a 7000 lb GCW trailer, you will be fine going through the Sierras. It will lag a little as you climb elevation and lose some power, so expect to get passed by people with a heavier foot on the pedal. Going with something heavier would be better off with a bigger engine.
I towed over 11K lbs with over 1K lbs in the bed of my F250 and it handled it well with the diesel, but I would not have been happy doing those same trips with that smaller gas engine. My friend runs that engine in his F250 and carries a truck camper while towing a utility trailer - It is great match for his needs and he travels many higher elevation logging roads.
Loading an off-road bike in the back of the truck is pretty easy, but street bikes will have a problem with the the break over angle and require a much longer and wider ramp. If the bike does not clear the tailgate, you may have trailer clearance issues without spending extra for a receiver that can handle heavy weight on an extension (like the SuperHitch).
