If the loaded to camp weight of your Coachmen is 8,000, you should have no problem towing.
It will not hurt the 6.0 to run at 3000-3500. I am sure you will see an increase in fuel useage though. With the 6-speed tranny, 5th and 6th, should both be overdrive. It won't hurt to tow in 4th when necessary.
I don't think you need to spend $1500-$2000 (guessing) to go to 4.10 gears, for your limited towing useage.
