I can see giving up the propane oven as all it is for us is a storage unit for pans.
But I could never give up my trusty, 30 year old iron skillet for the stove top. It bakes pizzas, it acts as a "slow microwave" for heating up leftovers, it's great for roasting veges, it's decent if you are forced to cook meats indooors (by weather).......and cleanup is minimal. Just scrape it out using a small amount of water, wipe it down with some oil and salt the surface.
An iron skillet is the single most overlooked "appliance" in the kitchen, IMO. So few carry one but it is so versatile.
Is cooking food on all that aluminum really that healthy? It seems that there isnt' any conclusive evidence; only circumstantial evidence. I dont take chances. I cook on iron and stainless steel, heat water in a porcelain coated pot and use a French press for my coffee.
I am a freak for toast in the morning. So, that's about the only time I fire up the micro. I dont like the way those toaster-on-a-burner dry out bread.
I like the quiet of propane. And I like the direct heat byproduct into my cab on a cold morning.
But your install is a thing of beauty. And it works for you.
How many aHRs of battery capacity do you carry? The sun is not very high at breakfast and dinner in our Lance. We only have a single group 31 AGM. I think it is 110 aHRs.
