As for the shifting I noticed that when it did finally shift the rpms were up near 5500. Shifting any earlier may have put the engine at red line which the computer would hold below and the truck may have lost speed as a result.
The gear spread is too wide for the hill and load they had.
The newer transmissions coming will help correct that. The new 8 speed gives more gears to help keep the engine in its power band.
That is why the big guys have many gears. The diesels they have, have narrow power bands which requires many gears.
Someday we may find CVT transmissions in everything which will totally cure this problem.
It is even possible the 3.73 rear end would have been the better choice for this particular hill climb. It would have given them about 4 mph more speed in that lower gear. I suspect when they were in the lowest gear the engine was in a rpm limit condition.
