Of Course, when brought in to have these issues checked out, nothing wrong can be found. In the end, it's an OK vehicle but nothing to write home about.
I have a 2015 GMC, double cab 8' bed with a Leer cab high cap. I have averaged between 13.8 and 16.8 on the 4 lane when not towing and between 7.9 and 9.8 towing a 6400ish trailer. That's in SW and central PA where nothing is flat. Sounds like you have something amiss somewhere to get those mileage numbers.
There is a software upgrade a dealer can flash that will correct the radio lockup and backup camera issues.
