Your revised plan looks good. The first plan would be problematic with axles interfering with the waste tanks, perhaps. As with all structures that use plumbing, typically, the drains rule all.
How much big are the frame rails in the Prowler?
BTW, that is not a bad looking rig, at all. Almost too nice to rip down and replace. When I started on mine, I could put my arm through the siding in one spot,lol. Unfortunately, the Mfg had to run the interior furnishings schedule through the Cheapening Dept. That is one thing I don't get. Have none of these designers ever visited an Ikea store? Cabinets off the rack at even Ikea have more quality and cosmetic personality than the typical RV fare. Newer trailers are marginally better. I peeked inside a newish Lance trailer, recently. The furnishings are better but it was as dark as a closet inside.
I did the U dinette, also. Exactly, for the same reason--bed availability. I kept the table on a single pedestal so it can be rotated. That allows seating around the table but the most forward part of the "U" is rarely used. I need a better pedestal arrangement but that is a head scratcher if I want the pedestal to telescope ( I do). It really isn't difficult to remove the upright for bed conversion but a fixed system is one less thing to move and that gets valuable real quick.
How are Mom and the girls doing with this design? You may want to bring in the better half for some ideas. The C/Hilton turned out to look like a bunk house (lack of feminine appeal) but that's pretty much what I was after.
