The original plan has 4 bunks in the back - two permanent and two that fold down. The previous owner took the two permanent bunks and made one larger bunk with a full size mattress.
My plan changes the rear bunk area to have three bunks in a staggered L shaped layout. The bathroom then shifts towards the rear but the vanity get's moved out of the bathroom (a necessity with a wife and two teenage daughters). I think this will make the kitchen area feel a lot more open. I'm going to replace the current dinette with a U shaped dinette that can convert to a bunk and also act as a seating area by removing the table.
In your second drawing, ditch the "vanity" sink, it is not needed since it is outside the bathroom and in the "kitchen" area it is pretty much added unnecessary hardware.
Move the kitchen sink to where the proposed vanity is.
Kitchen sink now does double duty as the bath vanity and the kitchen sink.. This will also simplify your plumbing by having it all on one side of the trailer.
With no vanity you now have more counter space or cabinet/storage space to work with.
