Move the kitchen sink to where the proposed vanity is.
Kitchen sink now does double duty as the bath vanity and the kitchen sink.. This will also simplify your plumbing by having it all on one side of the trailer.
With no vanity you now have more counter space or cabinet/storage space to work with.
I'm guessing you've never had to deal with teen daughters?!?:p
Just from a practical side that wouldn't function very well for us. Where do you place the dishes prior to washing? Where do you place the dishes after washing? Moving them back and forth from one side to the other would be a pain and you would constantly be either dropping food or dripping water on the floor as you move the dishes back and forth. Also you'd constantly have to put your toiletries away when you want to do the dishes (definitely NOT a practical thing for teen girls!).
From a construction/simplicity perspective your suggestion has merit, but from a functional standpoint it's not very practical for us. I do really appreciate the suggestion though because it makes me consider my choices.
