So here's a screenshot of how I plan on building the bunk area at the back of the trailer. I'm going with a 3 bunks in an L shaped configuration. I 'cut down' the bathroom walls to give a clear view of the layout. In the dead space created by the bathroom wall and bunk #2 I will place the water heater on the floor and the fresh water tank on a shelf above it. Above bunk #2 will be some additional overhead storage. Because bunk #2 spans the width of the trailer (8 feet) I figured that the one end would make a great spot for some additional storage. I will also add some storage for the top bunk as well.
