If building a TT from scratch, I would concentrate on the frame/running gear first.
For those that have done a trailer renovation, is it best to run wiring from the load center (to outlets and such) through the ceiling/roof or through the floor?
There are two different wiring schemes for most TT's, the 120v AC and the 12V DC. I ran both systems branches from the load center and DC distribution to two junction boxes in the ceiling. The junction boxes are covered by an aluminum panel that serves as a light fixture base. All wires are color coded so that, in the event something goes awry, I can access the junction boxes and sort out the problem. I also installed a 1" plastic conduit that is vacant from the junction box locations to the rear, in the bathroom. Should I need to pull more wire back that way, I have a channel to do so.
My choice was dictated by having a sealed and insulated underbelly that is aluminum clad and there is adequate space in the ceiling rafters to pull wire. Some of my kitchen runs leave the load center location (under the kitchen countertop) and run directly to the receptacles. Otherwise, everything is dropped from the ceiling.
FWIW, I installed 50 amp service and have about a dozen branch circuits. I have four GFCI receptacles that protect those four circuits. It is all overkill but I only have to install once and have the best distribution I can design. I also spent inordinate time and expense on 12V distribution but I have solar charging, an inverter for the fridge and entertainment gear, and two battery banks. All of my electrical, the load center and 12V distribution panel w/bus boxes, is located in a single cabinet space beneath the kitchen countertop. Battery meter and AC/DC gauges are on the front door of that cabinet.
As you've surmised, planning is key. Even with drawings, I forgot the dedicated receptacle for the fridge, a box location near the countertop, and the audio feed from TV to entertainment gear. I was able to recover those before the paneling went up.
