The x factor here is that your 2500 is the old platform and suspension, while the 3500 is the new platform, so there's going to be more to the change than just how the truck holds the load. I don't think you'd need airbags on a new 3500 with to hold 3000 lbs, but you might prefer the way the truck handles with them.
If you're comparing apples to apples (same model year), a stock 3500 will hold a load a bit better than a stock 2500 but the difference is pretty minor. ib516 posted a back to back comparison with a big fifth wheel once and the difference was small.
If you make the switch I think you'll find the new platform and front end is much improved.
