We have the 50A and enjoy not having to think about what we are using. It is simple math. An AC takes around 15A, a toaster or coffee pot around 10-12A, a microwave around 10A, electric water heater 8-10A and not sure about fridge on electric. I usually don't have an issue on 30A but recently tripped the 30A breaker running the AC, microwave and TV. I guess the electric water heater kicked in or something. Go 50A!
