The modern Ram transmissions are pretty good in the 2500-5500.
The 6.4L Hemi might feel a little less powerful than your EcoBoost, simply because it has to turn more RPMs to make the same torque (and therefore the HP is "peakier" as a result).
Towing fuel economy should be similar to your EcoBoost. The big hit would be driving without the trailer.
