I towed 12K with a 2017 Ram 2500 6.4. Truck did the job but I hated it. Transmission was awful. After a few highway trips, I upgraded to a one ton SRW diesel. The available payload was 3020 because of the lighter gas engine though. It was an SLT, but had more options that a typical Big Horn Trim level. There is no going back for me. I use it as a daily driver, and it is way less thirsty, even when towing. The Aisin Trans is a little better. Wanted to test the Chevy, but seeing as I had an EP purchase plan option, the Ram was a no brainier.
The 6.4 might be OK in your situation, but I'd go with a diesel - and I'm not saying this due to any weight or payload limitations - although payload on the 250/2500/diesel will be less due to the engine weight. You may want to upgrade the TT later. I used to be afraid of what some say on here about more maintenance, higher fuel price making gains in mileage a wash, emissions, having to use DEF, blah blah blah.
