I've stripped more of the old out. Clear floor all the way to the front of the frame now:
Exposed the freshwater tank. Measures 24" x 48" x 12", so must be about 60 gallons. That seems pretty big...
The vertical part of the 5th wheel tongue looks pretty well built. Here it is plus you can see the landing gear...

I'm now debating whether to reuse the Norcold 8662 fridge. I see it needs a roof penetration and it also has the outside access panel. A dorm fridge would be much easier to package. What are some thoughts on his one? How bullet-proof are the norcolds?
