It's called smoothing. Some cars and trucks have more and some have less. If you're talking used you can get a programmer and make it as harsh or smooth as you want.
New FI engines have REALLY good throttle input. That being so, the manufactures don't want just a tap at a stop sign to torch the tires so they smooth the program out.
To get the best performance out of my truck I have to "roll on" the throttle not punch it. It takes getting use to and I still don't like it after 8 years.
