Our previous TC was a hard side Citation with 2 wet batteries and a Honda 2000 genny. My wife used to grind coffee every morning as well as using a blow dryer and curling iron, plus blender for drinks plus charging all of the electronics( batteries, etc.) and toast and the odd micro.
I don't like generators as much of my working life has been in construction which is pretty noisey. Every time we wanted to grind coffee even for a short time, I had to fire up the generator.
Our new TC has a 2000W inverter, 330W solar and 4 AGM batteries located in the basement under the dinette. We dry camp or boondock exclusively and although we still bring the Honda along, it never gets used. We have found that with 4 batteries, as opposed to 2, when there is a shortage of solar, you can rob power from the batteries and then top them up when the sun comes out again.
We only use the micro for defrosting stuff but still use all of the other 120V appliances plus the toaster and still keep the batteries topped up with solar. Pricey, but worth it.
