The bags will indeed hold up 5000 lbs all by themselves if inflated to 100 psi. That doesn't mean the brackets, frame, axle, tires etc. can, or can hold up an additional 5000 lbs. The airbag brackets connect to the frame at it's weakest point. Fortunately the brackets are generally flimsy enough they will break first.
One of the biggest problems with the short double convoluted bags used in these kits is that they have a very modest amount of travel, far less than the truck had without them. You have to decide what ride height you want loaded, set up the brackets to put the bags within the manufacturer's specs for height (if it is even possible), then hope it also works without over stretching the bag when the truck is unloaded. I would go for overloads just touching as others have said. These kind of bags are VERY progressive in spring rate and if operated near the bottom of their travel with much pressure will do odd things to the ride.
