Thanks to all for the many compliments. Some posters have asked questions I'll try and answer everything in this post.
loulou57 asked about the white cabinets. Both DW and I agree on this one; we both like them. Either day or nite the interior is very bright. Rainy days are just a little easier to take. Another unanticipated benefit was the ease of matching the color for some of the mods. If the cabinets were something like oak or cherry, it would have been difficult to match the color and much more expensive too.
westend asked about the sliding shelves in the transit position. I'm not exactly what you mean, but I guess you are referring to the two full extensiion drawers. They are mounted on commercially available full extension slides (you can find them at Lowes or Home Depot) they have a friction lock in the fully retracted position that holds them just fine during transit.

thewhitehat asked about the LED lanterns in one of the pictures. I strongly recommend them. They are made by RAYOVAC and they really are fantastic! I liked the first one so much I bought the second one. DW reads alot and a set of 3 D cells powers the lantern for a LONG time. She can read many books on a single set of batteries. I bought these at Lowes, but they don't seem to stock them as a regular item. You can't go wrong buying this lantern. If you consider an alternative, don't be swayed by the number of LEDs in the lantern or by vague terms like "super bright LEDs" Instead look to see how many Lumens the lantern puts out. Anything over 200 Lumens should be pretty good.
de888rox asked about mounting hardware for the various mods. I just used ordinary wood screws. I feared they might not hold, but so far no problems. I figure if they do pull out they will just leave a small hole that I can mount a different type of anchor in should it be necessary. That said I used the same screws to mount a paper towel dispenser over the sink. That did not work out, but I used Molly bolts to remount it and everything is fine. You can find Molly bolts in a hardware store that are especially designed for very thin material, and we all know there isn't anything thinner than the walls in a camper. And while I'm talking about mounting hardware I'll mention Command strips. Be careful mounting these on the wall. They're ok for very light items but anything else will probably pull the Command strip AND the underlying wall covering off the wall. The strip holds fine, its the wallpaper that lets go.
