On topic, there is no way I'd tune my EB and tow with it. I haven't looked into the tuner options for gas engines, but I was investigating putting something on my Duramax. Most everything I found recommended setting back to or close to stock for towing. And as far as real world experience, my BIL let one of his installers use his truck for a job (also a Duramax) that entailed towing a 10k lb trailer from SLC to Park City and forgot to set his Bullydog back to stock, and he toasted the transmission (he had it running on some super "level-5 Crazy Eddie" tune or something for some reason I don't understand ...).
Anyway, I'd be worried about something similar on the EB -- the engine block might be able to handle it, but what about the rest of the components that are running the extra power?
