Had a similar situation coming down the West slope of Newfound Gap in the S.Appalachians. Long windy, slow, steep trail, lots of 20mph hairpins. Came down in 2nd gear, and both the F150 Ecoboost's brakes and the trailer's brakes got way too hot that day.
After that, I started down shifting into First gear and letting the engine rev up to max rpm. Noisy, potentially dangerous if you let it over-rev, and probably hard on the tranny. But it does increase the engine braking and slows you down. Not sure how this would work with the RAM 1500.
And even later I traded the F150 in for a diesel with an exhaust brake.
