The increasing pressure in the tube or " capillary" pushes on a diaphragm in the gas valve letting gas flow to the burner. When you adjust the temp knob, it pushes against a spring in the gas valve which allows you to adjust the temp. In order for it to work properly, I would say it needs to be at the inlet air duct of the heater so it can sense the actual room temp. Also, some sensing bulbs are supposed to be mounted at a particular angle. Vertical or horizontal. If it doesn't seem to be keeping the proper temp, it's possible that the sensing bulb may have lost some of its gas or liquid.
Yup, be careful when you are moving it. If you kink or break the little tube (that looks like a wire ) then you are doomed.
