Should be able to work. Depends on how handy you are & how much time you want to spend on the project & if they will sell a stripped down shell?
Have you considered a 13' Scamp. These are made in Backus, MN. The 13' ones manufactured now can be had with a shower. I'm pretty sure you can order one close to being an empty shell (not sure of the pricing on them, one way or the other).
I would believe they would be light enough for the Escape to tow.

2x "Aliner or Chalet would be perfect behind the Escape" as well.
Have you checked these Colorado made molded fiberglass trailers? Little Joe, Ponderosa & Roughneck. Very light weight, but with roomy beds.
