If you feel the need to add a programmer, go with the MADS Smarty Programmer. I ran an Edge for a while but the Smarty is better.

And yes, you can achieve better fuel economy than a stock setting.

As for the OEM engine builders, they tune down the middle. No matter how hard I pushed my stock 6.7 Cummins, it would not exceed 1250F EGT. For an extended run at 1,300+, you would start to melt pistons.

The Smarty programmer has safety built in to de-fuel should a dangerous situation start to occur - transmission slippage, excessive EGTs.
