Windows/vents open can help remove some heat while traveling but doing so can cause issues.
Windows falling out/breaking
Dirt/dust covering everything onside trailer
Waste tank smell being pulled inside from roof top vents
Only sure way it to run A/C Unit while in transit.
That means a generator......and being able to connect/power trailer while traveling. (large enough gen to handle A/C and means of hooking up power cord)
I have an in bed gen and a front power cord receptacle on our 5vr. I would plug gen in and run A/C when traveling in hot areas.
A wife that is uncomfortable due to heat is not a happy wife. A pregnant wife......I feel for you. Good luck!
