In all fairness though both the OP and others wanting to run A/C with the trailer under tow are in southern states which get extremely hot/humid during the summer months. I too wouldn't bother and simply run with the roof vent open but that's easy for me to say as we're in S Ontario where the weather is similar to many northern US states. However, even when we've traveled during the summer through hotter areas of the US I've not once even considered the idea of running A/C while under tow but rather just plug in when we get to our destination and that's always worked well enough for us. Frankly, if this is such an issue for those living in the southern states I too could see the attraction of a MH in which A/C can be run while traveling.
