Current single battery and propane, want to go dual

That looks like a 20 pound LP tank. You could stick with one and upgrade to a 30 or 40 pound tank. It would have the same footprint.
You could mount batteries inside the RV somewhere.
Find the right metal fabricator and you can have anything you want mounted on the tongue.
