UPDATE:
I got a call today at 7:45am. It was not my service adviser, but from the guy at the dealership who said he himself had gone to the parts dept to get the proper 0w40 oil as they do not stock it in bulk. He assured me that the correct oil was used -- so, I will trust them. He also told me that if the incorrect grade of oil is used (such as 5w20), the engine light will come on. I was suspicious, so I did some searching online and indeed there are a number of posts about incorrect oil grade causing the check engine light to come on in SRT cars (same basic 6.4L Hemi as my truck).
The dealership has a "drive thru" lane for oil changes with the pit under it. Next time, I will be sitting in the truck when the oil is changed and observe it being done. I didn't this time as I needed to leave it for the reprogram to be done.
On the driveshaft issue, the guy admitted they missed that. Since the truck only has 4000 miles on it, it's not critical, but I will ensure they lube it next time. According to the manual, it only needs lube every 10,000 miles anyway.
So, all is well.
